When you want to make a heart with the steamed milk there are a few things that you should know. The first is that you need to begin with cold full fat milk. No matter how you steam your milk, with a steamer or a microwave, do not let the milk get hotter than 170° F. When the milk reaches this temperature let it settle to have a velvety mixture then swirl (not mix) it vigorously to ensure that all the bubbles are gone. You can spice the milk or add expresso shots to the mixture for flavor. Adding spice can magnify the flavor of your cup of pour over coffee.

Making the heart

To make a steamed heart in your pour over coffee, the next step is simple but take your time to complete it. You will use about three ounces of steamed milk. Tilt the cup at a 45° and begin to pour the milk into the center. Many people pour the coffee too slow thinking that this will help make the design, however pouring the milk too slow will cause the foam to be left behind, and similarly pouring too fast will break the crema (the fluffy foam). When pouring the milk make sure you shake the pitcher, not the cup. You will see white circles begin to appear; when you have a good sized set of circles, pour the milk in line from side to side through the center. The white circles will split, and a heart will appear.
